The owner-chef pledges his love to his homeland on the menu, making reference to the seasonal changes in Taiwan’s mountains, seas, rivers and plains. Dishes pivot around his childhood memories using mostly produce from sustainable sources. Chargrilling techniques are deployed prominently and to great effect.
