In addition to L'Écrin, Hotel Crillon on the Place de la Concorde has this smart brasserie with an Art Deco interior in its portfolio. The chef entrusted with devising its menu is Paul Pairet, well known to the French at this point in time. He pays homage to the grills of his childhood (in the form of a fine selection of matured meats) and brasserie classics (oysters, tartare, Caesar salad, sole meunière etc). And, it must be said, the bill is affordable for such a place. Their sole objective is to create good food out of good ingredients.
