The Michelin Guide's review
Located just a couple of blocks from Plaza Independencia in the centre of the city, this restaurant is striking for its level of comfort and the elegance of its contemporary and stylishly appointed dining space. It boasts a pleasant terrace by the entrance, a cocktail bar and counter (a feature that is becoming increasingly fashionable) where guests can also sit and eat, an air-conditioned rear terrace, plus a glass-fronted wine cellar, including a private dining space next to it. Under the banner of “world cuisine”, Soberana creates dishes that are based around Argentinian and local recipes but with nods to other food cultures (particularly France, Italy and Spain). Dishes that impressed us here include the onion soup with Gruyère cheese gratin; prawns with rosti potatoes; fideua with octopus, calamari and seafood; white fish; seasonal risotto; rack of lamb with a creamy pumpkin and coconut purée; and the “Aguaribay” pavlova. The Josper oven is one of the restaurant’s hallmarks.
