The Michelin Guide's review
A fine-dining restaurant, the name of which pays homage to the culture of the countryside, the omnipresence of Argentinian meat and, above all, to the former Liniers livestock market where workers and breeders worked together like a family for generations. It is located in the extensive and lively Palermo Hollywood district and occupies a modern setting that was once a workshop (hence the light industrial vibe) with a kitchen that opens on to the dining room. Chef Dante Liporace, who spent time in Spain working under the legendary Ferran Adrià (at the erstwhile El Bulli) and several years behind the stove at Casa Rosada (under the baton of Mauricio Macri), showcases his cuisine on a menu entitled “Mediodía” ( “Noon or “Midday”), a second tasting-style option, plus a seasonal à la carte that includes standout dishes such as meat and fish tartare with fried bread and toasted parmesan. The common thread linking all his dishes is a desire to showcase the true culinary soul of city of Buenos Aires and its surrounding area.
