Le Tapis Rouge has been reincarnated as Elisa - Bistro & Terrasse, but the commitment to local sourcing and sustainable practices remains unchanged. This restaurant is located in the venerable Grandhotel Giessbach (built in 1875), right at the foot of the waterfalls of the same name, and boasts a wonderful view of Lake Brienz. The food is delicious, contemporary in style and primarily made using produce grown in the hotel's own 2ha vegetable garden. The other ingredients are locally sourced and from small-scale producers: fish comes from Lake Brienz, veal from a neighbouring farmer. On the menu, vegetables take centre stage, with dishes such as Giessbach agnolotti with Meiringen cream cheese and broccoli. Tip: In the evening, opt for the "Tour du Domaine" surprise menu for sharing (for two or more people).
